I am obsessed with these gingerbread cookies! You know what? I don't even think I liked gingerbread cookies before a couple months ago, but I just hadn't tried the right ones! I don't love crispy cookies, and these are perfectly soft and chewy and so good!

I first made these for our Christmas party last year and they were such a hit! I played around with the recipe and tested a few thing...we ended up rolling our cookie dough balls in brown sugar before baking and it was perfection! Then we topped with a light dusting of powdered sugar to be festive and everyone loved them!

Valentine's is coming up, but it's also snowing in Dallas this weekend so gingerbread still seemed appropriate! So I made this batch with a heart stencil (cut out of a post-it note lol) and they were perfect! Since I was doing a stencil design, I skipped rolling them in the brown sugar before baking, but tbh next time I'll do both! ;)

I baked my Valentine's batch on a new baking stone that I got for Christmas and it is amazing! Stone keeps the pan evenly heated and makes it much harder to burn something on the bottom! So great! I'll link it, along with my other supplies, below.
