Everyone LOVES these cookies! But you have to call "muffookies" or else they're not as good ;) I used to make an easy pumpkin muffin using a spice cake mix, a can of pumpkin, and one egg white, but I decided last year that I needed to upgrade to a completely homemade "specialty" cookie to bring to get togethes or to be ready to serve at a moment's notice in the fall/winter. SO after much research and a little testing, I give you: my homemade Pumpkin Muffookies! 

Ingredients

  • 1/2 cup (1 stick) melted butter
  • 1 cup pumpkin puree (brand matters! I use Libby's organic. Others work, but can change consistency)
  • 1/2 cup dark brown sugar
  • 1/2 cup granulated sugar
  • 1 room temp egg
  • 1 tsp vanilla extract
  • 2 cup all purpose flour
  • 2 tsp baking powder
  • 1 & 1/2 tsp pumpkin pie spice
  • 1/4 tsp ginger
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1.5 cups semi-sweet chocolate chips

Instructions

Preheat the oven to 350F. Line a baking sheet with parchment paper

Mix the melted butter, pumpkin puree, brown sugar, granulated sugar, egg, and vanilla until smooth. I use my KitchenAid Mixer.

Add in the flour, baking powder, and spices until fully incorporated. Then add the best part: the chocolate chips!

I like to make these medium size and get around 2 dozen; scoop around 1 heaping tablespoon per cookie and evenly distribute on baking sheet. Dough will be sticky: no need to flatten or shape into a ball. Bake around 10-12 minutes until center of the cookie feels firm to the touch.

These are perfect with coffee as an aftenoon treat when hosting or just for fun :)
