Hello, my Foodie Friends! I am soooo excited to share this crowd-pleasing appetizer with you this week! TBH I wasn't even a brie cheese fan until recently, and I'm pretty sure that baked brie is the only way I like it! So even if you're not sure about brie, give this recipe a shot! Y'all, sun-dried tomatoes and garlic are all you need for this baked brie recipe! I seriously cannot get over how simple this is, but it looks so fancy!! I LOVE a good shortcut and appetizers are where I want all the shortcuts, so this is perfect!
I think the part of this prep that took the longest was finding the sun-dried tomatoes at the grocery store! I ran into someone I knew in the tomato aisle and she wanted to chat! ;)
I chopped the tomatoes a bit, then used my garlic press to add one clove of garlic. Guys, you literally put the brie on a baking sheet, then add the toppings and bake it. Like, that's it. WHAT??!?!?! How is it that easy?! And it's so good! My photographer and friend, Kaylynn, and I crushed this brie after we were done taking photos of it. That's one of the best parts of a food photoshoot! ;)
After it comes out of the oven, carefully move brie to a serving board, add crackers or crostini, top with parsley, and dig in!
Omg just look at that cheesy, creamy goodness. This is the perfect savory dish as we head into fall! TBH I think this works year round, but would also be extra delicious and impressive at a Friendsgiving meal!
Alright, let's get down to it! There are so many different toppings and flavor combinations that you could add to baked brie, but here is the recipe for the Sun-dried Tomato Baked Brie!
Ingredients:
- wheel of brie cheese (I used a 6-inch wheel, which is great for 4-6 people)
- 1/2 cup sun-dried tomatoes (and their oil)
- 1 clove of garlic
- parsley
- crackers/crostini for serving
- olive oil to garnish (optional)
Directions:
- Pre-heat oven to 350°F.
- Chop tomatoes. Use garlic press and add one clove of garlic to tomatoes.
- Place brie on baking sheet and spread tomato mixture on top of brie. Do not remove the cheese rind- this keeps the cheese contained as it's melting, until you cut into it!
- Bake in oven for 10-15 minutes, until the cheese feels very soft.
- Transfer warm brie to a serving board and garnish with parsley, and olive oil, if desired.
- Cut into your delicious brie and enjoy the gooey cheesy goodness!
